Beau first became interested in pizza just as the rest of us do. When he was just a boy he enjoyed eating Papa Gino’s with his family. In 2011, his now-wife Maddie came home from Italy raving about the pizzas in Napoli, so he decided to try to reproduce a Neapolitan pizza. It came out well, but he wasn’t satisfied. He went on to learn from his mother-in-law the basics of making great dough, sauce and what combinations of cheese were best. From there, his pizza skills flourished and in 2017 he started an Instagram then called “ThePizzaGram”, which is now known as @RayStreetPizza.
In 2020, Beau partnered with Collectus Culina to host a series of pop-up restaurants that were wildly successful. Quarantine hit soon after, but the patrons still wanted pizza. Beau began selling pizzas out of his house, and the Ray Street Pizza name grew as word spread.
In February 2021, Beau moved Ray Street Pizza to a currently closed Bayona Cafe in the Manchester mills to begin selling pizzas in a more official capacity. He soon quit his day job as a software salesman to pursue his pizza dreams full time. He continues to grow his pizza business and is now offering takeout, delivery, and catering. Next stop is a full time gourmet pizza restaurant!
